{Scallop Congee}


This is Calvin's favourite dish from Crystal Jade. Everytime we ordered this, he'd say "We should try and cook this ourselves". This went on for a year and finally today, as we were having lunch after church, we decided to give it a shot and cook Scallop Congee for dinner. (ya... thinking of dinner even before we finished our lunch...haha)

It's actually pretty easy, but we've gotta spend about 2 hours stirring the porridge on low heat until it becomes smooth. Calvin rated it 7/10 while I think there's still quite a bit of room for improvement. The frozen scallops we bought were actually very fresh but I think there must be some way to bring out the taste better... marinate them? Need some research on this to perfect Calvin's fav comfort food...

    Good try Min! For better taste, you can cook porridge with dried scallops and chicken stock to bring up the taste :) For cheaper version my method is to cook with chicken feet to replace the chicken stock ;p Add some ginger slices to avoid fishy smell... The texture look great on the foto :) Eating porridge is a healthy choice! I love to eat them with You Tiao ;p

    Chef Esther...Recipe says chicken stock but cos I dun have chicken stock at home, so I used ikan bilis stock instead. I also did put ginger... put quite a bit of it, cos we both LOVE ginger. Maybe chicken stock really taste much better than ikan bilis stock. Will try that the next time. :) Thanks babe! (^__*)
